Mahi Mahi Taco's

Elevate your taco night with these vibrant and flavorful Mahi Mahi Tacos, featuring tender marinated fish, fresh pineapple, creamy avocado, and a zesty pink sauce. This delicious fusion of sweet, spicy, and savory elements is sure to delight your taste buds and become a new favorite.

Ingredients:

-       4 Mahi Mahi fillets

-       2 tablespoons olive oil

-       1 tablespoon lime juice

-       1 teaspoon ground cumin

-       1 teaspoon smoked paprika

-       1 teaspoon garlic powder

-       1 teaspoon onion powder

-       1 teaspoon dried oregano

-       Salt and pepper to taste

For the Tacos:

-       8 small corn or flour tortillas

-       1 cup fresh pineapple, diced

-       1 ripe avocado, diced

-       1 jalapeno, thinly sliced

-       1/2 cup fresh coriander (cilantro) leaves

-       Lime wedges for serving

For the Sauce:

-       1/2 cup Greek yogurt

-       2 tablespoons mayonnaise

-       1 tablespoon sriracha or any hot chili sauce

-       1 teaspoon smoked paprika

-       1 teaspoon lime juice

-       Salt to taste

Method:

Marinate the Fish:

1.    In a small bowl, combine olive oil, lime juice, cumin, smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Place the Mahi Mahi fillets in a shallow dish and pour the marinade over the fish. Ensure all fillets are well coated. Cover and refrigerate for at least 30 minutes to 1 hour.

Prepare the Sauce:

2.    In a bowl, mix together Greek yogurt, mayonnaise, sriracha, smoked paprika, lime juice, and salt until well combined. Adjust seasoning to taste. Cover and refrigerate until ready to use.

Bake the Fish:

3.    Heat a large non-stick pan over medium heat.

4.    Once the pan is hot, add a little olive oil to coat the bottom.

5.    Place the marinated Mahi Mahi fillets in the pan and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Assemble the Tacos:

6.    Warm the tortillas in a dry skillet or directly over a gas flame until pliable.

7.    Break the baked Mahi Mahi fillets into bite-sized pieces.

8.    Fill each tortilla with pieces of fish.

9.    Top with diced pineapple, diced avocado, and thinly sliced jalapeno.

10. Drizzle with the sauce.

11. Garnish with fresh coriander leaves and a squeeze of lime juice.

12. Serve the tacos immediately, accompanied by extra lime wedges and any remaining sauce on the side.
