Asian-style Shrimp Burger

Ingredients:

For the patty:

- 160g Shrimp Vannamei PD 

- 1 egg yolk

- 1 tsp ginger purée

- 1 heaped tbsp plain flour

- 1 spring onion, diced

- 1 lime, zested

- Handful of chopped coriander

- 1 tsp chopped garlic

- Salt and pepper

- Optional: 1 tsp gojuchang

For the slaw:

- 1/4 red cabbage

- 1/4 white cabbage

- 1 tbsp mirin

- 1 tbsp rice vinegar

- 1 tsp honey

- 1 tsp wasabi paste

- 1 lime, juiced and zested

- Salt and pepper

To serve: 

- Sesame brioche burger bun

- 1 tbsp mayo

- 1/4 avocados sliced

Method: 

1. In a food processor or mini chopper, mix 100g prawns with 1 diced spring onion, some lime zest, handful of chopped coriander, 1 heaped tbsp flour, 1 egg yolk, a good pinch of salt and pepper, 1 tsp chopped garlic and 1 tsp ginger purée. Pulse until you get a course mince like paste, dont over blend.

2. Add another 60g of roughly chopped prawns and fold into the mix. Divide the mixture into 2 patties with a spoon and dollop onto a well floured surface.

3. Use extra flour to lightly coat the outside of the burgers and shape them, dust off any excess and put into the fridge for at least 20 minutes to firm up.

4. Make the slaw by using a peeler to create thin strips. Toss through the mirin, rice vinegar, lime juice and season with salt and pepper. Leave to sit for 15 minutes then squeeze out the excess liquid so your burgers aren’t soggy! Mix through the wasabi and honey.

5. Fry the burgers in a little oil in a non stick pan for roughly 3 minutes on either side.

6. Toast the burger bun, spread one side with mayo and the other sliced avocado. Place on the prawn patty, a handful of slaw and dive in. HEAVEN.
